Baked Acorn Squash

Acorn Squash is available early fall through winter.  It is typically dark green with patches of orange on it, always buy organic when possible.

Instructions

  • 1. Preheat oven to 400 degrees
  • 2. Wash acorn squash and pat dry. See above you tube video for instructions on how to cut and deseed acorn squash.
  • 3. Place squash cut side up in a large roasting pan, add 1/4 cup water to bottom of pan to keep squash from burning.
  • 4. Rub 1 tsp butter or ghee in each of the 4 acorn halves
  • 5. Add 1/2 tsp honey to each acorn halve and rub into flesh of acorn
  • 6. Sprinkle 1/4 tsp sea salt into flesh of each acorn
  • 7. Sprinkle 1/4 tsp turmeric into flesh of each acorn
  • 8. If adding pepper, do so now
  • 9. Place in oven and bake for 45-50 minutes or until flesh is soft and easily pierced with a fork
  • 10. Remove and let cool a few minutes before eating.
