Banana Choco-Coco Bread

Jackie’s Tip: I use the Magic Line loaf pans that are 7.5 inch by 3.5 inch, they can be found on Amazon.  I have found that this size of pan bakes almond flour very nicely.

Instructions

  • 1. Preheat the oven to 350 degrees
  • 2. Prepare two small loaf pans. Grease the sides and bottom of the pans with melted coconut oil or ghee and put parchment paper on the bottom of the pan.
  • 3. Mix the dry ingredients, almond flour, coconut flour, baking soda and salt with a whisk in a large bowl.
  • 4. Mix the wet ingredients, honey, eggs in a separate bowl with a whisk.
  • 5. Mix the wet ingredients into the dry ingredients.
  • 6. Fold in the mashed banana, shredded coconut and dark chocolate chips
  • 7. Fold the batter into the prepared pans and bake for 45-50 minutes, until a toothpick or fork comes out clean in the middle of the loaf.
  • 8. Remove the loaves from the oven and allow them to cool in the pans for 15-20 minutes.
  • 9. Use a knife to go around edge of loaf pan and turn upside down to remove bread.
  • 10. Let cool on a wire rack and serve and enjoy.
