Jackie’s Tip: I use the Magic Line loaf pans that are 7.5 inch by 3.5 inch, they can be found on Amazon. I have found that this size of pan bakes almond flour very nicely.
Banana Choco-Coco Bread

Ingredients
- 3 cups almond flour
- 1 Tbsp. coconut flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup warmed honey
- 3 eggs
- 2 very ripe mashed bananas
- 1/2 cup unsweetened shredded coconut
- 1/2 cup dark chocolate chips (anything 70% cocoa is fine) For SCD Diet leave out chocolate
Instructions
- 1. Preheat the oven to 350 degrees
- 2. Prepare two small loaf pans. Grease the sides and bottom of the pans with melted coconut oil or ghee and put parchment paper on the bottom of the pan.
- 3. Mix the dry ingredients, almond flour, coconut flour, baking soda and salt with a whisk in a large bowl.
- 4. Mix the wet ingredients, honey, eggs in a separate bowl with a whisk.
- 5. Mix the wet ingredients into the dry ingredients.
- 6. Fold in the mashed banana, shredded coconut and dark chocolate chips
- 7. Fold the batter into the prepared pans and bake for 45-50 minutes, until a toothpick or fork comes out clean in the middle of the loaf.
- 8. Remove the loaves from the oven and allow them to cool in the pans for 15-20 minutes.
- 9. Use a knife to go around edge of loaf pan and turn upside down to remove bread.
- 10. Let cool on a wire rack and serve and enjoy.
