Cauliflower Pizza Crust

If you haven’t tried cauliflower pizza crust yet, you are in for a treat!  I keep hoping that someone will open a Paleo Pizza place that has cauliflower crust and almond flour crust for pizzas.  I’m keeping my fingers crossed!  You can top your pizza however you would like, but if you use veggies you will be getting a double serving with the cauliflower crust. I used sauteed mushrooms and onions on this particular pizza.  Most of my recipes are fairly easy, this one takes a little more time, but really worth it. Enjoy!

Instructions

  • 1. Preheat oven to 450 degrees and prepare baking stone or baking sheet with parchment paper and spread olive oil on parchment paper
  • 2. Rinse cauliflower thoroughly and cut into small florets. Place florets into food processor and "rice" the cauliflower. Use the S blade and pulse just a few times until the cauliflower is the consistency of rice.
  • 3. Transfer cauliflower to microwave safe dish and microwave 6-8 minutes until cooked.
  • 4. Let the cauliflower cool. Place the cauliflower rice in a tea towel or a cheese cloth and squeeze as much moisture out as you can. It's really important to get as much moisture as you can out- I usually get almost a full cup.
  • 5. Place the riced, dried cauliflower in a mixing bowl and add in egg, parmesan cheese, herbamare, pesto and black pepper and mix thoroughly
  • 6. Place the dough on your prepared baking sheet and shape into a thin pizza circle with your hands.
  • 7. Bake for 15-20 minutes or until golden brown.
  • 8. Remove from oven and let cool for 5 minutes. Add your pizza sauce and pizza toppings and place back in the oven for 10 more minutes
  • 9. Enjoy
