Jackie’s Tips:
You could get 12 muffins from this recipe, but I prefer them to be nice sized, so I only make 10. These muffins are very sweet so your kids and family will love them. Have one of these muffins instead of a cookie or some other unhealthy snack!
Cinnamon-Honey-Almond Flour Muffins

Ingredients
- 2 1/2 cups finely ground almond flour
- 1 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 1/4 tsp. sea salt
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1/2 cup honey
- Topping Ingredients
- 2 TBSP. Honey
- 1 TBSP. Cinnamon
- 1 TBSP. Ghee or Butter

Instructions
- Preheat Oven to 325 degrees. Insert 10 baking cups into muffin pan.
- Mix the dry ingredients, almond flour, ground cinnamon, baking soda and sea salt in a large bowl with a whisk.
- Mix the wet ingredients, 2 eggs, almond milk, and honey in another bowl.
- Mix wet ingredients into dry ingredients with a spatula.
- Spoon batter into prepared muffin baking cups(I use a ice cream scoop with a lever) The baking cups should be a little over a half full.
- Mix all the topping ingredients in a microwave safe bowl. Heat for about 15-20 seconds and mix well.
- Top each muffin with about 1/4 tsp. of the topping mix. Use a fork or cake tester to swirl the topping down into the muffins so the topping isn't just sitting on top.
- Bake for 20-25 minutes or until a toothpick or cake tester comes out clean.
