Spinach Prosciutto Frittata

Jackie’s Tips:

If you want to skip roasting the garlic you can use roasted garlic from a jar.

This recipe is great to make ahead and heat up for breakfast or dinner during the week.

Make sure you oil the entire pan. Your frittata will come out of the pan much easier when you are ready to slice.


If you buy triple washed organic spinach, it will really cut down on prep time!

Instructions

  • 1. Preheat oven to 350
  • 2. In a large bowl add in eggs, herbamare, pepper and whisk briskly- set aside.
  • 3. If you have a skillet that can go directly to the oven, use that for this recipe. I have a Le Creuset that I love.
  • 4. Heat olive oil in skillet and make sure the oil gets all around the pan including the sides.
  • 5. Add in chopped onion and garlic and saute for 3-5 minutes until tender.
  • 6. Add in chopped spinach and prosciutto and saute until spinach is wilted.
  • 7. Whisk eggs once more and add to skillet, gently mix all ingredients.
  • 8. Let egg mixture set up on medium heat for about 3-5 minutes in skillet.
  • 9. Sprinkle 1/3 cup parmesean cheese on top of egg mixture and move to oven.
  • 10. Bake for 10- 15 minutes until mixture is set and starting to brown at edges.
  • 11. Remove from oven- let cool for 10 minutes.
  • 12. Slice and enjoy!
