If you haven’t tried spiralizing yet, you are missing out! It is so easy and a great way to add more veggies into your diet. My favorite vegetable noodle is made with zucchini (zoodles) and then you add a clean marinara sauce and you have dinner ready to go. Ingredients
- 4 medium zucchini
- 1 cup sliced mushrooms- I used white button
- 1/3 cup chopped onion
- 1 clove fresh garlic
- 1 tablespoon extra virgin olive oil
- sea salt and black pepper to taste
- Organic marinara sauce of your choice
Instructions
- 1. Wash zucchini, leave skin on, and spiralize into thin "noodles" Set aside
- 2. In a large saute pan add olive oil and turn to low-medium heat.
- 3. After olive oil is heated add mushrooms, onion, and garlic and saute for 5 minutes or until soft. Salt and pepper to taste
- 4. Add spiralized zucchini noodles and saute for about 3-4 minutes until softened, but not soggy. I use tongs to separate and saute. Salt and pepper to taste.
- 5. Pour Organic Marinara over noodles and stir and heat until warm.
- 6. Optional: this is great with some shaved Parmesan cheese on top.
